Reuben Casserole

Do you like Reuben sandwiches?  If you do, you will love this easy and delicious casserole.  It has the makings of a Reuben sandwich, corned beef, sauerkraut, swiss cheese, but you bake it.  

Ingredients

  • Package Bob Evans Original Mashed Potatoes (24 oz)
  • 2 large eggs
  • 1/4 cup milk
  • 1/3 pound thickly sliced corned beef cut into 1/2 inch pieces (available at grocery deli)
  • 1 can sauerkraut, drained (4 oz)
  • 1 tablespoon spicy brown mustard
  • 1 cup shredded Swiss cheese, divided

Directions

Preheat oven to 400F. In large bowl, stir together potatoes, eggs and milk until well combined. Stir in corned beef, sauerkraut and mustard. Set aside 2 tablespoons of cheese. Stir in remaining cheese into potato mixture. Pour into a greased 8 x 8 inch oval baking pan. Top with 2 tablespoons cheese. Bake 15-20 minutes or until top is golden.  Serve with a tossed salad.  Yummy!  Recipe compliments of Bob Evans.

Reuben Casserole

I found this recipe on Bob Evans site and it sounds delicious.  I’ll be making it New Years Day, and thought I would share it with you.  It’s basically a Reuben sandwich, but you bake it in a casserole dish. 

Here you go:  

Prep time :15 minutes
Cook time :20 minutes

Makes 6 servings

  • 1 (24 ounce) package Bob Evans Mashed Potatoes  2 eggs  
  • 1/4 cup milk

  • 1 (14 ounce) can sauerkraut, drained  
  • 1 tablespoon spicy brown mustard  
  • 1 cup shredded Swiss cheese, divided

Preheat oven to 400 degrees F. In large bowl, stir together potatoes, eggs and milk until well combined. Stir in corned beef, sauerkraut and mustard. Set aside 2 tbsp. of cheese. Stir in remaining cheese into potato mixture. Pour into a greased 8×8 inch oval baking pan. Top with 2 tbsp. cheese. Bake 15-20 minutes or until top is golden.

Crockpot Steamers

Ingredients:

  • 3 pounds 90% lean ground beef
  • 2 bottles of Heinz Chili Sauce
  • brown sugar to taste
  • 1 small can tomato sauce
  • 1 cup water

Brown ground beef in skillet chopping beef until it’s fine; pour into colander and rinse well with hot water. Combine ground beef in slow cooker with sauce, water, and brown sugar. Stir thoroughly. Cover and cook on Low 6 to 8 hours stirring occasionally. Serve on a hot dog or hamburger bun with chips and sweet pickles. Great over hot dogs too.

Crockpot – Scalloped Potatoes & Ham

Scalloped Potatoes with Ham

  • 8 to 12 ounces ham, diced
  • 8 to 10 medium potatoes, peeled and thinly sliced
  • 2 medium onions, peeled and thinly sliced
  • salt and pepper, to taste
  • 1 cup shredded Cheddar cheese
  • 1 can (10 3/4 ounces) condensed cream of celery or cream of potato soup
  • paprika, optional


Layer half of the ham, potatoes, and onions in slow cooker. Sprinkle with salt and pepper, then the shredded cheese. Repeat with remaining ham, potatoes, onions, salt, pepper, and cheese. Pour condensed soup over the top then sprinkle with a little paprika, if desired. Cover and cook on LOW for 7 to 9 hours, or until potatoes are tender.Serves 6 to 8.
